2010年桐庐县市售食品食源性致病菌污染调查分析

摘    要:目的:了解浙江省桐庐县市售食品中食源性致病菌污染状况。方法:对桐庐县5个主要开放性农贸市场和2个非开放性超市市场,采集8大类9个品种509份食品,进行6类食源性致病菌检测。结果:509份食品中检出致病菌115株(检出率22.59%),其中溶血性弧菌71株、沙门菌31株、金黄色葡萄球菌13株,检出率分别是13.95%、6.09%、2.56%。水产品、猪肉和海产品中致病菌检出率分别为54.28%、28.70%和26.67%。夏秋季开放性市场食源性致病菌检出率是非开放性市场的3.5倍。结论:水产品、猪肉和海产品是桐庐县主要污染食品;副溶血性弧菌、沙门菌和金黄色葡萄球菌是该县食品中常见的食源性致病菌,而且以副溶血性弧菌污染为主,其次依次为沙门菌、金黄色葡萄球菌。开放性市场改为非开放性的市场,夏秋季食品食源性致病菌检出率可以下降72%.

Abstract:Objective:To investigate the current status of food contamination by food borne pathogens in the market in Tonglu county.Methods: Total of 509 food samples for 9 kinds of food in 8 classes were collected from 5 open-markets of farm produce and 2 non-open supper markets to conduct pathogen detection.Results: 115 strains of pathogens were detected from 509 food samples(The total detection rate was 22.59%),including 71 strains of Vibrio parahaemolyticus and 31 strains of Salmonella and 13 strains of Staphylococcus aureus,their detection rate were 13.95% and 6.09% and 2.56% respectively.The detection rates in fishery and pork and marine products were 54.28% and 28.70% and 26.67% respectively.In summer and autumn,foodborne pathogens detection rate in open market was 3.5 times higher than in non-open market.Conclusion: The fishery and pork and marine product were the main contaminated foods.Vibrio parahaemolyticus and Salmonella and Staphylococcus aureus were common types of foodborne pathogens in food in Tonglu county.The contamination rate of Vibrio parahaemolyticus was more serious than Salmonella,and the contamination rate of Salmonella was more serious than Staphylococcus aureus.In summer and autumn,if the open market was instead by non-open market,the detection rate food-borne pathogens may be reduced by 72%.
