摘    要:目的: 研究不同"变色"程度枸杞子粉末、提取液颜色与内在色素类代表成分类胡萝卜素、芦丁含量的相关性。方法: 采用电子感官分析方法(分光测色仪)测量不同"变色"程度枸杞子粉末及脂溶性、水溶性色素提取液颜色;采用紫外-可见分光光度法测定枸杞子脂溶性色素类胡萝卜素含量;采用HPLC测定枸杞子中水溶性色素芦丁含量。结果: 随感官评定枸杞子外观颜色加深,分光测色仪测定粉末明亮度、偏红、偏黄程度均呈降低趋势;枸杞子药材粉末颜色与水溶性色素提取液颜色呈强相关,且与内在色素代表成分类胡萝卜素、芦丁含量均呈强相关。结论: 采用分光测色仪客观量化枸杞子外观颜色的方法具有可行性;枸杞子粉末颜色与相关色素类代表成分含量具有相关性,表明用外观颜色评价其内在品质具有一定科学性,为进一步建立枸杞子快速品质评价方法奠定基础。

Abstract:Objective: To study the correlation between color of powder, extracting solution and pigment components' contents, such as carotenoids, rutin of Lycii Fructus expressing different degree of color-changing. Method: The colorimeter was used to determine the color of powder, fat-soluble pigments and water-soluble pigments extracting solution of Lycii Fructus. The ultraviolet-visible spectrophotometry was applied to determine carotenoid content. High performance liquid chromatography (HPLC) was applied to determine rutin content in Lycii Fructus. Result: With the appearance color deepening in Lycii Fructus, the colorimeter measured powders' brightness, reddish, yellowish extent showed a decreasing trend.The powder color was strongly correlated with water-soluble pigment extract solution color, and pigment components' contents. Conclusion: It was feasible to objectively and quantitatively measure external color of Lycii Fructus by colorimeter.The powder color was correlated with pigment components' contents, which showed that with color evaluating its inner quality is scientific.It laid the foundation for further development of rapid quality evaluation method of Lycii Fructus.
