水发牛百叶中过氧化氢残留及其影响因素研究

摘    要:[目的]了解水发牛百叶中过氧化氢残留情况及其影响因素。[方法]跟踪监测牛百叶水发整个过程,在每个采样点采集不同阶段的水发样品,部分样品在实验室进行模拟处理,分别检测过氧化氢残留量。[结果]水发液中过氧化氢可通过水发迁移入水发产品,但随着清洗和浸泡,产品中的残留量总体呈下降趋势。[结论]目前牛百叶等水发产品中普遍存在使用过氧化氢进行漂白的情况,食品中过氧化氢不稳定。

Abstract:[Objective] To know the situation of hydrogenperoxide residua in waterishlogged tripe and its influencing factors. [Methods] The whole procedure of waterishlogging was followed.Samples at different phases were collected at each sampling place,some samples were processed in lab,and then the formaldehyde residua was tested. [Results] Hydrogenperoxide added in water would transfer into products.By proper cleaning and soaking,the hydrogenperoxide residua would decrease. [Conclusion] Hydrogenperoxide is commonly used for bleaching waterishlogged food products like tripe.Yet hydrogenperoxide in food is unstable.
