摘    要:目的通过对柳江县市售食品中食源性致病菌污染状况的监测,为预防食源性疾病提供科学依据。方法按照柳江县食源性致病菌监测工作方案的要求,在各个监测点采集8大类市售食品共206份,其中2011年采集市售食品96份,2012年采集市售食品110份,进行相应的致病菌检测,结果数据用统计学方法进行分析。结果 206份抽检食品中共分离出致病菌17株,其中金黄色葡萄球菌4株,阪崎肠杆菌2株,腊样芽孢杆菌11株,总检出率为8.25%。熟肉制品和生榨果汁的菌落总数、大肠菌群污染严重,不合格样品比例分别为58.33%和83.33%。结论柳江县居民的消费食品中存在食源性致病菌的污染,其中熟制米面制品和生榨鲜果汁等自制食品的卫生质量较差,应加强此类食品的卫生监督,预防食源性疾病的发生。

Abstract:Objective Through monitoring the contamination of foodborne pathogens in commercially available food, to - provide scientific basis for the prevention of focdborne diseases in Liujiang county. Methods According to foodbome pathogens monitoring program, we randomly collected 206 samples of commercially available food from 8 supermarkets for pathogen detection, of which, 96 samples were collected in 2011 and 110 samples in 2012. The results were analyzed with statistical methods. Results Seventeen strains had been isolated from 206 samples, including 4 strains of staphylococcus aureus, 2 strains of enterobacter sakazakii, 11 strains of bacillus cereus, the total detection rate was 8.25%. The total bacteria count and coliforms were rather high in contaminated cooked meat and raw juice, of which, the proportion of sub- standard samples was 58.33% and 83.33% respectively. Conclusions Contamination of foodborne pathogens exists in food available in supermarket of Liujiang county, of which, food made from rice and wheat, fruit juice are of low quality, therefore, the supervision of food safety should be strengthened to prevent the occurrence of focdbome disease.
