中山市小榄镇熟食制品卫生学监测分析

摘    要:目的了解小榄镇熟食制品的卫生状况,为卫生部门有目的地进行管理提供可靠依据。方法对小榄镇辖区2006~2007年各农贸市场以及超市熟食档的熟食制品进行抽样监测,依照国家标准评价熟食制品监测的合格率。结果2006~2007年的合格率为49.65%,其中2006年合格率为39.73%,2007年合格率为60.22%,两年合格率比较有显著性差异(P<0.01);2006~2007年的菌落总数合格率为53.53%,其中2006年合格率为37.67%,2007年合格率为70.44%,两年合格率比较有显著性差异(P<0.01);大肠菌群合格率为71.91%,其中2006年合格率为69.52%,2007年合格率为74.45%,两年合格率比较无显著性差异(P>0.05)。结论近两年熟食制品微生物监测的合格率偏低,卫生行政部门应加大对熟食制品的执法力度,规范熟食制品的生产、储存、运输、销售一系列流程的管理。

Abstract:Objective To review the current status of cooked food hygiene in Xiaolan town of Zhongshan and to provide credible basis for the development of hygienic inspection and supervision Methods Random samples of cooked foods from Xiaolan town of Zhongshan of were tested and evaluated in accordanc with the provisions of Food Hygiene Inspection Law of the People's Republic of China and the provisions of the State Standard of the People's Republic of China and the criterion provided by corporations and factories. Results The total qualified rate of cooked food samples in 2006~2007 was 49.65 %. The qualified rate of food sample is 39.73% in 2006 and 60.22% in 2007.The two qualified rates are different remarkably(P<0.01). The qualified rate of the total bacteria is 53.53% in 2006~2007 and the one of 2006 is 37.67% and the one of 2007 is 70.44%. The two qualified rates are different remarkably(P<0.01) .;the qualified rate of coliform bacteria is 71.91% and the one of 2006 is 69.52% and the one of 2007 is 74.45%. The two qualified rates have little difference(P>0.05).Conclusion The qualified rate of cookedfood is on the low side in the two years. Inspection and supervision should be stressed on cookedfoods. The flow management of cooked foods production ,storage,transport and vendition should be more canonical.
