南阳市城区公共餐饮具集中式消毒管理模式的探讨

摘    要:目的解决南阳市城区街头饮食摊点和小餐馆餐具消毒合格率低的食品卫生难题。方法推行餐具集中式消毒管理模式并按国标规定的方法进行餐具消毒效果监测。结果推行集中式消毒8a,城区餐具的消毒合格率由1997年的19.8%上升至2005年的70.2%,两者之间差异有统计学意义(P<0.01);肠道传染病发病率由112.44/10万下降到78.67/10万。结论集中式消毒是解决街头饮食摊点和小餐饮餐具消毒问题的有效管理模式,推行集中式消毒应坚持监督执法与有偿服务分开,集中消毒企业要靠质量和服务赢得市场。

Abstract:Objective To solve the problem of low eligible rate of tableware disinfection in the street venders' and small restaurants.Methods International standard method was used to conduct surveillance on the disinfection effect of tableware.Results Centralized disinfection was conducted for 8 years,the eligible rate in the urban area increased from 19.8% in 1997 to 70.2% in 2005,the difference was significant(P<0.01);the morbidity of coli infectious diseases decreased from 112.44/100000 to 78.67/100000.Conclusion Centralized disinfection is an effective management model to solve the disinfection problem in street venders' and small restaurants.
