中、西式快餐营养成分调查

[目的 ]　了解中、西式快餐营养成分能否满足合理营养的要求。　 [方法 ]　对辖区内销售量较大的中、西式快餐进行调查检测 ,并用SY -2营养膳食分析软件进行处理分析。　 [结果 ]　中、西式快餐中营养素与膳食营养素参考摄入量 (DRIs)有差异。 5 0 %左右中式快餐的能量、蛋白质、脂肪偏高 ,半数以上西式快餐的脂肪偏高 ,碳水化合物偏低。84%中、西式快餐三大营养素的能量比例不合理。　 [结论 ]　中、西式快餐中的某些营养素过多或不足是造成膳食不平衡的主要不利因素之一 ;经营者和消费者都要注意膳食合理搭配食用 ,防止营养性疾病

A survey and analysis on nutritional composition of domestic and western fast food

To explore whether or not the nutritional composition of the Chinese and Western fast-food could satisfy the demand of adequate nutrition. The Chinese and Western fast-food which had a good sale in our district was surveyed and detected. The data were analyzed by using SY-2 nutrition analysis software. The nutrition in Chinese and western fast-food were different with that listed in DRIs. The energy, protein, and fat were too much in about 50% of the Chinese fast-food, while in over half of the Western fast-food, the fat was too much, and the carbohydrate was too low. The energy proportion from the three main nutrients was unreasonable in about 84% of Chinese and Western fast-food. [Conclusion] The main disadvantageous factor causing dietary unbalance is the deficient or superfluous of certain nutrition in Chinese and Western fast-food. The sellers and consumers should all pay attention to allocate diet reasonably, and prevent the nutritional diseases.
