摘    要:目的建立同时测定肉及肉制品中亚硝酸盐、硝酸盐的离子色谱法。方法把肉及肉制品进行简单的提取后,以碳酸钠-碳酸氢钠为淋洗液,阴离子交换柱分离,电导检测器检测,保留时间定性,峰面积定量。结果样品中亚硝酸盐、硝酸盐的最低检测浓度均为0.15 mg/kg,相对标准偏差均在1.51%以下,回收率在87.60%以上。结论该方法操作简单,重复性好,回收率、灵敏度均达到检测的要求。
