补益类药膳食疗方配方规律和烹饪特点研究

摘    要:目的:研究补益类药膳方的配伍规律和烹饪加工特点。方法:用Visual FoxPro 6.0关系型数据库语言对从《中国药膳大辞典》中抽出的480条补益类药膳方的出处,配方中中药、食药及食物使用种数和比重情况,配方使用中药、食药、食物种类及其出现频率,中药、食药及食物的配伍情况,药膳成形的类型及其出现频率等进行统计分析。结果:统计表明本研究所采用的药膳方包含了古今各类103种文献;药膳配方中中药与食药所占的比例小于食物所占的比例,其在用药的量上小于中药方剂所用中药的量;中药黄芪、党参、当归、人参、菟丝子等,食药桂圆、枸杞、甘草、莱菔、豆豉、百合等,食物粳米、鸡蛋、精肉、核桃、白糖、糯米等在本类药膳中使用频率较高;中药人参、黄芪、党参、当归、肉苁蓉等,食药莲子、山药、枸杞、红枣、薏苡仁、陈皮等与食物粳米、鸡蛋、精肉、核桃、白糖、糯米等配伍使用较多。菜肴类型所占的比例最大,汤、粥、羹、茶也占有很高比例。

Abstract:Objective:To study the compounding rules and cooking features of supplementing and boosting formulae in medicine diet.Methods: Using relational-like data base languages of Visual FoxPro 6.0,480 supplementing and boosting formulae in medicine diet were extracted from China Medicine Diet Thesaurus.Then the source of origin,the utilized number and weight of Chinese materia medica,diet medicine and food in compounding formula,the utilized species and their frequency of occurrence of Chinese materia medica,diet medicine and food in compounding formula,the concerted application of Chinese materia medica,diet medicine and food and the formed types of medicine diet and their frequency of occurrence were given statistical analysis respectively.Results: The statistics showed that there were 103 each kind of ancient and modern literatures included in the medicine diet formulae which were adopted in this study;the proportion of Chinese materia medica and food were smaller than the food of it;the quantity of medication was fewer than it in Chinese medicinal formulae;the Chinese materia medica of milkvetch root,the Chinese materia medica of milkvetch root,angelica,ginseng,Chinese dodder herb etc,the diet medicine longan,medlar,licorice,semen raphani,sojae praeparatum,semen,lily etc and the food of rice fruit,eggs,refined lean pork,walnut,sugar,glutinous rice etc were used in the high frequency in these medicine diet formulae;There were high frequency concerted application of drugs between the Chinese materia medica of ginseng,milkvetch root,dangshen,angelica,caulis cistanchis etc,the diet medicine of lotus seeds,Chinese yam,medlar,red date,semen coicis,orange peel etc and the food of rice fruit, eggs,refined lean pork,sugar,glutinous rice,ham etc.The proportion of cooked food(usu.meat dishes) type was the largest,and soup,porridge,thick soup and tea also accounted for a significant proportion.
