摘    要:目的建立一种测定大豆发酵制品——淡豆豉中异黄酮类成分含量的紫外分光光度法分析方法。方法以染料木素为对照品,利用染料木素与氢氧化钠产生反应,在271nm波长处有最大吸收点,用紫外分光光度法测定淡豆豉中总异黄酮的含量。结果淡豆豉中总异黄酮的含量为9.884mg/g,加样回收率为99.3%,相对标准偏差为2.1%。结论方法简便、准确、重现性好,可作为测定淡豆豉中总异黄酮的含量的一种手段,适用于淡豆豉及其它豆制品的日常分析和质量控制。

Abstract:Objective To establish a UV speetrophotometry for determination of isoflavones in Semen Sojae Praeparatum. Methods Genistein was seleeted as the referenee substanee. Based on the reaetion of genistein and NaOH, whieh has the maxium absorption in 271nm wavelength, speetrophotometry method was used for determination of isoflavones in Semen Sojae Praeparatum. Results The total eontent of isoflavones in Semen Sojae Praeparatum extraets was 9. 884mg/g with mean reeovery 99.3%, and the RSD was 2.1%. Conclusion This method is simple,aeeurate and reprodueible,it ean be used for the routine analysis and quality eontrol of the Semen Sojae Praeparatum and funetion food.
