摘    要:Studies on the glycemic index(GI) are popular now and have found that the low GI foods are closely related to human health. Barley is a kind of low-GI food containing β-glucan and plentiful microel-ements, so it plays an important role in glucose, lipid metabolism as well as in preventing and curing diabetes and its complications. Naked oat fruit is a variety of barley. Its content of β-glucan is much higher than barley and other components are similar. Consequently, studies on the naked oat fruit have perspective.
