石家庄地区食品中添加剂监测结果分析

目的了解2005—2007年石家庄地区市售主要食品的食品添加剂含量状况,定量分析苯甲酸、山梨酸、二氧化硫残留、甲醛、色素所带来的健康风险危害。方法结合河北省疾病预防控制中心下达的污染物检测任务,采用GB/T5009国家标准检验方法和卫生部下发的卫监发文件对相关食品进行污染物检测。结果3年共采集7种食品,获得1987个检验数据,按有关国家标准进行评价,酱腌菜类苯甲酸钠超标23.40%,糖精钠超标15.38%,甜蜜素超标6.82%,二氧化硫超标15.15%。检出违禁染料苏丹红,硝酸盐的含量阳性均值高达579.8mg/kg;蜜饯类食品二氧化硫残留超标9.38%;豆制品中甲醛阳性率47.8%,二氧化硫阳性检出率10.5%,苯甲酸超标23.5%;面粉中过氧化苯甲酰超标率为9.52%。结论石家庄地区滥用食品添加剂问题突出,应对酱腌菜、蜜饯类、豆制品加工食品加强卫生管理和监测。另外该地食品中的二氧化硫和苯甲酸污染有较大的健康风险。
