对80家餐饮企业和食堂的卫生学评价

摘    要:目的对餐饮业和食堂的食品卫生安全控制设施进行卫生学评价,为行政部门审核提供技术依据。方法按照餐饮业相关法律法规以及技术规范对80家餐饮企业和食堂采用卫生学调查、卫生工程分析、检查表法进行卫生学评价。结果 100.0%的企业选址合格;87.5%的企业总体布局合理;37家(含专间)企业中,5.4%的企业专间一项符合要求;餐用具清洗消毒保洁设施的合格率为90.0%;库房和食品贮存场所的合格率为80.0%;有4家企业在食品处理区设置厕所。竣工验收阶段,100.0%的企业都能将专间、餐用具清洗消毒保洁设施、库房和食品贮存场所、厕所位置等项目整改到位。结论经过卫生学评价,大多数在选址设计阶段不合格的企业均能将不合格项目整改到位。80家企业总体的食品卫生安全控制设施情况良好。
