摘    要:目的通过对一起食物中毒进行病原学诊断和中毒原因分析,探讨食物中毒病原菌的快速诊断和溯源的方法。方法对食物中毒病人和环境样品采样,依据改良分子信标方法和中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789—2003)进行病原诊断,然后用脉冲场凝胶电泳(PFGE)技术对病原菌进行溯源。结果5份患者的肛拭子均检出肠炎沙门菌,8份糕点师傅的肛拭子中1份检出肠炎沙门菌,21份可疑食品中2份检出肠炎沙门菌,21份生产加工环境样品中1份检出肠炎沙门菌;PFGE分型得出2种型别,这2种型别仅有一条带的差异。结论改良分子信标方法能够快速准确的诊断引起食物中毒的病原菌,为传统方法提供检测方向。脉冲场凝胶电泳(PFGE)技术对病原菌的溯源以及分析菌株之间的相关性具有重要意义。

Rapid diagnosis and source tracing of a case of food poisoning's pathogenic bacteria

Abstract:Objective To investigate the origin of pathogenic bacteria of a food poisoning. Mothods The samples from patients environment were collected and tested for detection of pathogenic bacteria using the modified molecular beacon and the National Standards for Microbiological Examination of Food Hygiene(GB/T4789). Results There 5 patients" anal swabs and one of 8 pastry/cake makers" anal swabs were positive for Salmonella enteritidis. Two positives were detected from 21 suspected food samples and one positive was detected from 21 environmental sampels was positive. The isolates were classified into two types by the PFGE typing. Two types were different in one band. Conclusion The modified molecular beacon can rapidly and exactly detect pathogenic bacteria in the food poisoning. It offers a new way over conventional detection methods.
