河南省居民黄曲霉毒素B1膳食暴露量评估

摘    要:摘要:目的 评估河南省居民膳食中黄曲霉毒素B1的暴露量,估算膳食中黄曲霉毒素B1暴露所引发的肝癌发生风险。方法 2013-2014年对河南省部分食品中黄曲霉毒素开展了监测,结合2002年河南省居民营养与健康状况调查中食物摄入量数据,利用点评估的方法对居民膳食中黄曲霉毒素B1暴露水平进行评估。结果 总人群中黄曲霉毒素B1膳食暴露量为2.32 ng/(kg·bw·d),农村居民为2.76 ng/(kg·bw·d),城市居民为1.40 ng/(kg·bw·d);膳食中对黄曲霉毒素B1暴露量贡献率较高的食品为小麦粉及其制品(82.42%)和植物油(13.10%);膳食中黄曲霉毒素B1导致肝癌发生风险在总人群中为009/10万人,农村居民中为2.76/10万人,城市居民中为0.05/10万人。结论 河南省农村地区人群中黄曲霉毒素B1暴露风险较高,小麦粉及其制品、植物油是河南省人群最主要的黄曲霉毒素B1膳食暴露来源。

Abstract:Abstract:Objective This study was to assess aflatoxin B1 dietary exposure in Henan and estimate the risk of liver cancer caused by such exposure. Methods Surveillance of aflatoxin B1 in food was conducted in Henan from 2013 to 2014. With the data of resident food intake from resident nutrition and health survey, the point assessment method was applied to assess aflatoxin B1 exposure risk among residents.Results The average diary aflatoxin B1 exposure of the total population, rural residents, urban residents in Henan were 2.32, 2.76, 1.40 ng/(kgobwod), respectively. Flour products and plant oil were the major source of aflatoxin B1 intake. The risk of liver cancer caused by the dietary aflatoxin B1 exposure among the total population, rural residents and urban residents in Henan were 0.09, 0.11, 0.05 per one hundred thousand, respectively. Conclusion Rural residents face higher exposure of aflatoxin B1. Flour products and plant oil were the primary sources of dietary aflatoxin B1 in Henan.
