| 摘 要： | 目的了解广州市黄埔区学校食堂餐具洗消剂残留和影响洗消剂残留的主要因素,为保障学生身心健康提供参考。方法采用普查法,对黄埔区70间学校食堂进行餐具洗消制度和餐具洗消知识问卷调查,包括44间幼儿园食堂、22间中小学食堂及4间高等专科学校食堂;采用分层随机抽样方法,抽检1 204份餐具进行洗消剂残留检测。通过拟合二分类Logistic回归模型,探讨学校餐具洗消剂残留的影响因素。结果烷基(苯)磺酸钠残留总合格率为91.61%,幼儿园合格率最高,中小学合格率最低。游离性余氯残留全部合格。学校餐具洗消剂残留的主要影响因素有学校类型、学校性质、落实餐具洗消制度、餐具洗消知识得分等。结论督促学校食堂严格落实餐具洗消制度,加强餐具洗消员洗消知识培训,可减少洗消剂残留。重点是中小学食堂和私立学校食堂。
