摘    要:应用HACCP方法 ,对不合格瓶装矿泉水生产工艺中可能存在危害和卫生问题进行分析、查验 ,并采取相应的改进措施 ,取得显著成效。提出矿泉水生产的水源保护、过滤、灌装、灭菌等工艺过程卫生是矿泉水生产危害控制的关键环节。建议在矿泉水制备生产中 ,建立和实施HACCP管理 ,以最大限度保证矿泉水产品的安全卫生质量。

Abstract:Hazard and hygiene problem of unqualified mineral water processes were analyzed and tested with HACCP method. After taking relevant improved measures, good effect was gained. The results pointed out that technology of protecting source of water, filtering, filling, disinfecting and sterilizing were the critical control points. It was suggested that HACCP management should be established and carried out in processes of mineral water manufacture so as entirely to ensure safety and quality of mineral water.
