鳀鱼油多烯脂肪酸的研制

摘    要:研究了用于浓缩纯化DHA、EPA多烯脂肪酸的低温-钠盐乙醇法的不同工艺操作,并从效率方面进行了分析比较。同时还研究了EDTA等对多烯脂肪酸的抗氧化作用。认为两步皂化连续低温处理具有成本低、效率高的优点。EDTA具有抗氧化作用。

Abstract:Three kinds of technological manipulations in low temperature-sodium salt alcohol method for concentrating and purifying polyunsaturated fatty acids of DHA and EPA were investigated in the present paper.It is suggested that two saponification and low temperature were of some advantages for a lower cost and higher yield.The study showed that autoxidation of unsaturated lipids could be retarded or inhibited in the presene of EDTA which acted to inhibit the lipid oxidation by chelating prooxidant metal ions.
