“6T实务”管理法在餐饮食品安全管理中的应用研究

摘    要:目的对"6T实务"管理法在餐饮食品安全管理中的应用效果进行分析评价,并就"6T实务"管理法在餐饮业的进一步推广和深入发展提出建议。方法采用平行对照调查法、自身前后对照调查法以及问卷调查法,对"6T实务"管理法在餐饮食品安全管理中的应用效果比较分析。结果干预组的食品安全风险评分、食具合格率、食品安全知识答对率与对照组相比较,差别均有统计学意义(P0.01);对干预组餐饮单位实施干预措施前后比较,食品安全风险评分、食具合格率、食品安全知识答对率均有统计学意义(P0.01);688名被调查人员中,81.39%认为"6T实务"管理法"非常科学合理";77.91%认为实施"6T实务"管理法非常有效。结论 "6T实务"管理法在餐饮食品安全管理中的应用成效明显。建议在今后进一步推广中并结合食品安全培训、餐饮服务许可、日常监管同步进行,同时,将"6T实务"管理法与食品安全法律法规、其他餐饮监管制度有机结合,使之得到进一步深入发展。

Abstract:Objective:To analyse and evaluate the application of 6T practice management in food safety management of catering industry, and take some advice to further promote and deepen the development 6T praedce management in catering industry. Method Use parallel contrast survey, before and after contrast survey, questionnaire survey to analyse and evaluate the implementation feasibility of 6T practice management in food safety management of catering industry. Results Compared the food safety risk rate, tableware pass rate, correct answer rate of food safety knowledge of intervention group with those of control group, the differences were all significant( P 〈 0.01 ). For the intervention group before and after the implementation of interventions, the differences of the food safety risk rate, tableware pass rate, correct answer rate of food safety knowledge were all significant( P 〈 0.01 ). In the 688 staffs who were investigated, 81.39 % of them thought 6T practice management was very scientific and rational, and 77.91% thought 6T practice management was very effective. Conclusion 6T practice management in food safety management of catering industry is very effective. It is better to promote 6T practice management further in the future with food safety training, food service license and daily supervision and management. Combined with food safety laws and regulations, other food regulatory system ,6T practice management can be developed further.
