临沭县2003-2008年冷食产品的监测

摘    要:目的 了解冷食产品的质量状况及其影响因素,为有效监督管理提供科学依据.方法 将2003~2008年对本县9家冷食生产企业及11家冷食批发部进行监督检查及抽样检测的资料进行回顾性分析.结果 检测冷食样品491份,合格382份,合格率为77.80%,不合格原因以微生物指标为主,占98.18%.6~9月份检测合格率为 68.95%,明显低于3~5月份的89.25%(χ2=28.81,P<0.01).结论 我县冷食生产企业急需加强旺季的监测、监督,实行危害分析关键控制点(HACCP)管理,以确保冷食产品的安全和卫生.
