石河子大学医学院大学生膳食营养水平分析

摘    要:目的了解石河子大学医学院大学生膳食营养状况和膳食结构,为进一步进行营养干预提供科学依据。方法采用称量法结合24h膳食回顾法对190例石河子大学医学院在校大学生进行连续3d的膳食调查。采用Excel表及SPSS17.0软件进行数据处理和统计分析。结果调查对象膳食中Ca、VitA、VitB1、VitB2、叶酸均分别低于RNI的70%,Ca、VitA、VitB2、叶酸摄入严重不足;鱼虾、新鲜蔬菜、水果、豆类、奶类摄入不足;三大供能营养物质供能比例及三餐分配能量基本合理;膳食中优质蛋白的摄入不足。结论石河子大学医学院大学生的膳食结构不合理,某些营养素摄入量不足,应增加蔬菜水果类、鱼虾、奶类、豆类等食物的摄入量;今后应加强营养教育及其他干预措施,改善石河子大学医学院大学生的膳食营养状况。

Analytical investigation of dietary nutrition level among the students in Shihezi University School of Medicine

Abstract:Objective To know nutritional current status and dietary patterns of the students in Shihezi University School of Medicine, in order to further provide the scientific basis for nutritional intervention. Methods According to the the weighing method combined with 24 h dietary retrospective method, 190 students in Shihezi University School of Medicine were conducted by dietary survey for continuous 3 days. Data handling and statistic analysis were taken by Excel and SPSS 17.0 statistics software. Results The intakes of calcium, VitA, VitB1, VitB2, folic acid in respondents diets were 70% less respectively than the (Recommended Nutrient Intake) RNI, and the least intakes were calcium, VitA, VitB2, folic acid. The intakes of fish and shrimp,fresh vegetables, fruit, beans, milk were not enough. Three major nutrients for energy distribution ratio and the distribution of three meals were rational. The intake of high-quality protein in diets was not enough. Conclusion The dietary structure of students in Shihezi University School of Medicine is irrational. Intakes of certain nutrients are inadequate. Fruit and vegetables, fish and shrimp, milk, beans should be increased. We should strengthen the nutritional education and other measures in order to improve the nutritional status of the students in the college.
