温州市食品污染物中副溶血弧菌污染调查报告分析

摘    要:目的:了解温州市食品污染物中副溶血性弧菌的污染状况,初步确定可能污染副溶血性弧菌的高危食品,为食物中毒监测提供科学依据和为食品安全的危险性评估提供依据。方法:参照GB/T4789.7-2003对样品进行副溶血性弧菌分离、生化鉴定[1]。结果:检测生肉(牛、羊、鸡、猪)、熟肉制品、水产品(包括海水鱼、淡水鱼)、冷菜共4类样品494件,检出副溶血性弧菌75株,检出率15.2%;4类食品中副溶血性弧菌阳性率最高的为水产品(20%)。水产品中不同样品检出率:虾31.11%,贝21.88%,蟹16.67%,鱼12.20%,各类食品中9月份副溶血性弧菌检出率最高。结论:温州市鹿城区、瓯海区和洞头县各类食品副溶血性弧菌污染程度无显著性差异,贝、虾类水产品污染高于鱼和蟹。

Abstract:Objective:Understood VP pollution condition in food in Wenzhou,the preliminary determination is possible to pollute VP high danger food,provides the scientific basis for the food poisoning monitor and provides the basis for food security risk appraised.Methods:Refers to GB/T4789.7-2003 to carry on VP separation,the biochemistry appraisal to the sample[1].Results:The examination raw meat(cow,sheep,chicken,pig),the cooked meat product,the aquatic product(including sea water fish,fresh water fish),cold dish altogether four kinds of samples 494,pick out VP 75 bacteria,picking out rate 15.2%;In four kinds of foods the VP Positive rate is the highest that is the aquatic product(20%).In aquatic product different sample pickingout rate: The shrimp 31.11%,the shell 21.88%,the crab 16.67%,the fish 12.20%,in each kind of food in September VP picking out rate is highest.Conclusion:In Lucheng,Ouhai and Dongtou County of Wenzhou each kind of food VP pollution degree has no statistical significance,the shell,the shrimp aquatic product is higher than the fish and the crab in Vibrio parahaemolyticus pollution.
