广州市海珠区饮食业餐饮具消毒卫生调查分析

摘    要:目的掌握海珠区饮食业餐饮具消毒情况,为提高饮食业餐饮具消毒的卫生管理提供科学依据。方法按国家GB14934—1994卫生标准,2005年共采集1215个大、中、小型饮食店的餐饮具,检测大肠菌群和感官指标。结果共监测餐饮具样本10088件,合格7091件,合格率为70.3%。在1年中,第三季度抽检的餐饮具消毒合格率最低;对各型饮食店的抽检显示,小型饮食店餐饮具的消毒合格率最低。海珠区的餐饮具消毒合格率与广州市其他区域餐饮具消毒合格率比较,均有非常显著性差异。结论不断加强饮食业的卫生监督,把好餐具消毒卫生关,抓好关键环节,严格控制食物中毒的发生。

Abstract:OBJECTIVE To master the tableware sterilize status of Haizhu District and to supply the science according of sanitation supervise of improving tableware sterilize.METHODS According to national criterion GB14934-1994,1 215 eating houses of deferent type have been inspected,the index is the sense and the coliform.RESULTS 10 088 samples have been inspected,the eligigility samples are 7 091 and the eligibility ratio is 70.3%.The three quarter's eligibility ratio is the lowest in one year and the small eating house's eligibility ratio is also the lowest of all.There are difference between Haizhu District and other district in Guangzhou City.CONCLUSIONS It is very important to strenthen health supervision of eating house and control the effection of tableware sterilize,only when the key process is controled,the food poisoning will be deduce.
