深圳市0~14岁儿童铝的膳食暴露评估

摘    要:目的了解深圳市儿童主要食品铝的膳食暴露水平,评估深圳市儿童铝膳食暴露的安全性。方法 2009-2011年对深圳市11类主要食品的铝含量进行抽样调查,应用深圳市2008年的膳食营养状况调查数据进行铝的膳食暴露评估。结果深圳儿童膳食铝摄入量P50为1.31mg/d,占暂定每周可耐受量(PTWI)的31.76%,铝摄入量P95为3.74mg/d,占PTWI的96.31%,居民铝摄入量P97.5为4.51mg/d,占PTWI的127.00%,P97.5的膳食铝来源前3位的食物种类依次是蔬菜2.41mg(34.53%)、发酵型面点2.22mg(31.81%)和豆类0.75mg(10.41%)。结论深圳儿童膳食铝的摄入量的P95是安全的,而P97.5超过PTWI的推荐标准。减少含铝膨松剂的使用是控制铝膳食摄入的主要途径。

Abstract:Objective To assess the dietary exposure to aluminium of children aged 0-14 years in Shenzhen,and to evaluate the safety of diet in terms of aluminium exposure.Methods A total of 11 kinds of major food samples were randomly collected from 2009 to 2011 in Shenzhen,and tested for the aluminium level.Data of dietary and nutrition surveyed in 2008 was used to evaluate the exposure.Results The median dietary intake(P50)of aluminium was 1.31 mg per day,which accounted for 31.76% of PTWI(provisional tolerable weekly intake).Meantime,the P95 and P97.5 dietary intake of aluminium were 3.74 mg and 4.51 mg per day,accounting for 96.31% and 127.00% of PTWI,respectively.Vegetable(2.41 mg),fermented food(2.22 mg)and bean product(0.75 mg)were the top three source of dietary intake(P97.5)of aluminium.Conclusions Dietary intake(P95)of aluminium of children in Shenzhen is safe,but the P97.5 exceeds the PTWI.Reducing the use of leavening agent is imortant to control dietary intake of aluminium.
