不同品种黑木耳不同部位中铁含量的差异研究

摘    要:目的为探讨不同品种黑木耳中铁含量的差异,选用国内市场上常见的八种不同品种的黑木耳。方法采用二氮杂菲光度法测定黑木耳子实体、黑木耳水提液、料渣及黑木耳多糖中的铁含量,并使用微波消解法进行样品的前处理。结果黑木耳不同品种子实体间铁含量差异很大,且黑木耳不同部位的铁含量随品种不同变化较大,黑木耳多糖中也有少部分铁存在,含量占子实体的7.14%~23.94%。结论浙江黑木耳(Aa6)和东北秋木耳(Aa7)含铁量较高,是两类较好补铁品种。
