2011年北京市门头沟区食品安全风险监测分析

摘    要:目的了解门头沟区食品中食源性致病菌的污染状况,初步确定可能被污染的食品,为食源性疾病的控制提供科学的依据。方法按照《2011年北京市食源性致病菌监测工作手册》的要求,随机抽取8大类130件样品进行食源性致病菌的监测。结果在130件样品中,检出食源性致病菌5株,总检出率为3.85%,其中,单核细胞增生李斯特菌检出率较高为3.64%,其次是金黄色葡萄球菌,检出率为0.91%。在8类食品中,中式凉拌菜污染率为50.00%,散装的熟肉制品污染率为14.29%。结论门头沟区食品已不同程度受到食源性致病菌的污染,中式凉拌菜和散装熟肉制品是主要的污染食品,提示应加强饭店自制食品的监督管理,减少食源性疾病的发生。

Abstract:Objective To understand the food infection situation caused by foodborne pathogens in Mentougou District,and identify the potentially contaminated food,in order to provide scientific basis for control of foodborne diseases.Methods In accordance with the requirements of Beijing manual for monitoring foodborne pathogens in 2011,a total of 8 categories 130 samples were randomly selected for foodborne pathogens monitoring.Results Among 130 samples,5 strains of foodborne pathogens were detected,the total detection rate was 3.85%,among which the detection rate of Listeria Monocytogenes was the highest of 3.64%,followed by Staphylococcus Aureus Bacteria with 0.91% detection rate.Among 8 categories of food,the contamination rate was 50.00% in Chinese salad and 14.29% in loose-packed cooked meat.Conclusion Food in Mentougou District has been contaminated by foodborne pathogens to different degrees,of which Chinese salad and loose-packed cooked meat are the main contaminated food,which indicate that monitoring and management of restaurant self-made food should be strengthened to reduce the incidence of foodborne diseases.
