摘    要:目的了解沭阳地区食品生产企业所生产的糕点类食品卫生现状,为卫生监督人员在卫生监督执法和卫生评价时提供科学依据。方法抽检沭阳地区2006—2008年度142家食品生产单位糕点类食品样本进行卫生细菌、致病菌检测。结果共检测糕点类食品标本717份,其中625份样本卫生指标符合国家标准,合格率为87.2%。结论沭阳地区糕点类食品的卫生现状尚存在一些问题,应加强对食品生产企业的卫生监督监测和卫生知识宣传。

Abstract:[ Objective] To understand the food hygiene situation of pastry food produced by food production enterprises in Shuyang, provide scientific basis for hygiene supervision and hygienic evaluation. [ Methods] The hygienic bacterium and pathogenic bacteria were detected in pastry food samples collected from 142 food production enterprises in Shuyang during 2006--2008. [ Results] Among 717 pastry food samples, hygienic indicator of 625 samples reached the nation standard, with qualified rate of 87.2%. [ Conclusion] There were some problems on the food hygiene situation of pastry food in Shuyang. The hygiene supervision and health knowledge education should be strengthened in food production enterprises, especially in small workshops.
