摘    要:目的 建立4-巯基嘧啶(4-MP)紫外分光光度法测定大蒜中硫代亚磺酸酯含量的方法。方法 乙醇超声浸提大蒜样品,用4-MP紫外分光光度法定量检测硫代亚磺酸酯的含量。结果 冬储大蒜和新鲜大蒜中硫代亚磺酸酯的含量分别为0.117 0%和0.243 5%;RSD分别为3.43%和3.08%,均小于5%。结论 该方法简单、灵敏、快速、价廉.

Abstract:Objective To set up a simple 4MP-UV method for the determination of thiosulfinates contents in garlic. Methods The sample of garlic extraction was immersed into alcohol,sonicated and detected with spectrophotometric assay by 4MP-UV. Results The saved-up garlic and the fresh garlic respectively contained thiosulfinates 0.117 0% and 0.243 5%.Relative standard deviations(RSD) were 3.43% and 3.08%,both less than 5%. Conclusion The method is easy,sensitive,fast and inexpensive.
