摘    要:目的了解西安市集中式餐具消毒公司的消毒效果的现状。为有效开展集中式餐具消毒公司的监督监测提供科学依据。方法2008年对西安市18家集中式餐具消毒公司的餐具进行随机抽样检测。结果集中式餐具消毒公司的餐具玻璃杯、茶杯、汤碗、骨碟、汤勺的大肠菌群合格率差异无统计学意义(P〉0.05),合格率为80%。筷子的大肠菌群合格率为60.87%,与其他样品合格率差异有统计学意义(P〈0.05)。沙门菌、志贺菌、金黄色葡萄菌合格率为100%。有4个公司检测的样品全部合格,占22%。有17个采样点的检测的样本全部合格,占47%。结论应大力加强集中式餐具消毒公司及餐饮单位的监督监测工作。

Abstract:Objective] To understand the current status of disinfection effect of tableware in centralized disinfection companies, and provide scientific evidence for effective implementation of supervision and monitoring of centralized disinfection companies. Methods] Tableware collected from 18 centralized disinfection companies were tested by random sampling. Results] Qualified rate of coliform group in samples including glass, teacup, bowl, dish, spoon was 80%, showed no significant difference ( P 〉 0.05 ). Qualified rate of chopsticks was 60.82%, showed significant differences with other samples (P 〈 0.05). Qualified rate of salmonella, shigella and Staphylococcus aureus was 100%. 4 companies'samples were all qualified, accounted for 22%. Samples collected from 17 sampling points were all qualified, accounted for 47%. Conclusion] Monitoring and supervision of centralized disinfection companies should be strengthened.
