2004~2008年莱州市部分餐饮单位食(饮)具消毒效果调查

摘    要:目的]了解莱州市食(饮)具消毒状况,为监督监测提供科学依据。方法]根据GB14934-1994《食(饮)具消毒卫生标准》,用大肠菌群快检纸片对2004~2008年莱州市食(饮)具38700份进行大肠菌群检测。结果]2004~2008年合计检测38700份,合格率为66.57%。各年食(饮)具检测合格率分别为66.24%、66.10%、66.86%、66.93%、66.95%,不同年份食(饮)具检测合格率差异无统计学意义(P〉0.05)。大型、小型、学校食(饮)具合格率分别为73.18%、63.31%、91.81%,不同经营规模餐饮单位食(饮)具合格率差异有统计学意义(P〈0.01);每年一~四季度食(饮)具检测合格率分别为73.13%、63.27%、66.78%、73.12%,不同季度食(饮)具消毒检测合格率差异有统计学意义(P〈0.01)。结论]莱州市学校食(饮)具合格率较高,小型餐饮单位食(饮)具合格率较低,不同季度合格率以二、三季度较低。

Abstract:Objective] To understand the conditions of tableware disinfection in Laizhou city,and provide scientific basis for the supervision and monitoring.Methods]According to GB14934-1994 Hygienic standard for disinfection of tableware,38 700 tableware were tested with the rapid coliform bacteria test in Laizhou,2004-2008.Results]The total detection in 2004-2008 were 38 700 samples,the qualified rate was 66.57%.The qualified rate in each year was 66.24%,66.10%,66.86%,66.93% and 66.95% respectively,with no statistically significant difference(P0.01).The qualified rate in the large,small-sized catering units and the schools was 73.18%,63.31%,and 91.81% respectively.The differences in qualified rates in different scale catering units were significant(P0.01).The qualified rate in each quarter of a year was 73.13%,63.27%,66.78% and 73.12% respectively,with significant differences(P0.01).The total qualified rate of tableware was 66.57%.Conclusion]The qualified rates in the schools are high,the small-sized catering units are low,the second and the third quarter of a year is low.
