2009年公主岭市饮食服务行业食(饮)具消毒效果分析

摘    要:目的]了解公主岭市饮食服务行业食(饮)具消毒的基本状况,为开展针对性的卫生监督工作提供依据。方法]2009年,用大肠菌群快速纸片法对公主岭市488家餐饮单位的7 680件食(饮)具进行大肠菌群检测。结果]食(饮)具消毒总合格率为61.56%,大型、中型、小型餐饮单位食(饮)具合格率分别为77.40%、64.50%、57.56%,不同经营规模餐饮单位食(饮)具合格率差异有统计学意义(P〈0.05);第一、二、三、四季度食(饮)具消毒合格率分别为60.63%、62.41%、50.44%、70.32%,不同季节食(饮)具消毒检测合格率差异有统计学意义(P〈0.05),市区、乡镇餐饮单位合格率分别为67.40%、52.94%(P〈0.05)。结论]公主岭市餐饮单位合格率一般,应加强食(饮)具消毒管理,提高从业人员的卫生意识,为广大消费者的身体健康提供安全的保障。

Abstract:Objective] To understand the tableware sterilization situation of the catering service in Gongzhuling city,in order to provide basis for conducting specific health supervision.Methods]7 680 random samples of tableware among 488 catering units were tested in 2009 with the fast paper diffusion test method for coliform bacteria.Results]The total eligible rate of the tableware sterilization was 61.56%.The passing rate was 77.40%,64.50%,and 57.56% in large,medium and small catering units,in food(drink) catering units of different scale,the difference was significant(P0.05);the disinfection compliance rates were 60.63%,62.41%,50.44%,and 70.32% in the first,second,third and fourth quarters,in different seasons,the difference in the qualified rate of disinfection was significant(P0.05).the passing rates were 67.40% and 52.94% urban and township catering units(P0.05).Conclusion]The eligible rate of catering units in Gongzhuling city is average,tableware sterilization management should be strengthened,health consciousness of practitioners should be improved,security should be provided for the majority of consumers' health.
