摘    要:目的]减少重大活动食品安全事故,保障重大活动食品安全。方法]应用现场调查、实验室分析、HACCP等原理和方法,对我市重大活动食品安全保障现状及9个餐饮接待单位进行分析,提出重大活动食品安全保障关键技术与管理机制。结果]重大活动食品安全保障关键技术为组织管理技术与餐饮加工制作"三、五"技术,管理机制为"二、三、四、五"机制。结论]应用重大活动中的食品安全保障关键技术与管理机制,可以有效的保证重大活动的食品安全。

Abstract:Objective] To analyze the risk factors for food safety in major events,so as to ensure food safety.Methods]Field investigation,laboratory analysis,HACCP and other principles and methods were used for analysis on food safety guarantee in major events in 9 catering units in the city,and provided key technology and management mechanism for food safety in major events.Results]The key technologies for food safety guarantee are organization and management technology and the "three,five" technology in food processing,"two,three,four,five" mechanism in management mechanism.Conclusion]The application of key technology and management mechanism for food safety guarantee in major events can effectively ensure the food safety in major events.
