摘    要:[目的]了解漳州市食品中食源性致病菌的污染情况,确定易受污染的高危食品,为预防和控制食源性疾病提供科学依据。[方法]2004~2008年6~10月,按照“全国食源性疾病监测计划”检验技术要求提出的检测方法和福建省卫生厅下达的监测任务监测,采集大型超市、农贸市场、宾馆、酒店、个体摊贩销售点、街边现挤现卖生奶的流动摊点在售生猪肉、生牛肉、生羊肉、散装熟肉制品、婴儿食品、冰激凌、速冻米面(生、熟)、动物性水产品(鲜、冻、生食)、生食蔬菜、乳和乳制品(生牛奶、消毒奶)10类食品,检测沙门菌、金黄色葡萄球菌、单核细胞增生性李斯特氏菌、大肠杆菌O157、空肠弯曲菌、副溶血性弧菌、霍乱弧菌、创伤弧菌、阪崎肠杆菌等项目。[结果]2004-2008年合计检测10类、329份食品,检出致病菌37株,检出率为11.25%,以副溶血性弧菌检出率最高为18.70%。在10类食品中以动物性水产品污染率为最高为46.51%,其次为速冻米面(生、熟)为21.74%;生猪肉,生羊肉、生牛肉、熟肉制品、婴儿食品、乳和乳制品(生奶、消毒奶)等食品均存在不同程度的污染。[结论]通过连续5年对我市市售食品中食源性致病菌主动监测,掌握食源性致病菌的污染状况,高危食品及9类食源性致病菌在不同食品中的分布情况,为加强食品卫生监督管理,防止食源性疾病的暴发提供科学依据。

Abstract:[Objective]To study the contamination status of food-borne pathogens in foods in Zhangzhou city, find out food with high risk,and provide scientific basis for prevention and control of food-borne pathogens, [Methods]From June to October, 2004-2008, ten kinds of food samples were collected from large-scale supermarkets, farm markets, restaurant, hotel,individual vendors selling point and mobile stalls selling raw milk. Consist of ten kinds of food samples were in the sale of raw pork, raw beef, lamb, meat in bulk, baby food, ice cream, frozen pasta (raw, cooked), animal aquatic product (fresh,frozen,raw), raw vegetables, milk and dairy products (raw milk, sterilized milk). Examinations of Salmonella, Staphylococcus aureus , Listeria monocytogenes , Escherichia Coli O157, Campylobaeter jejuni , Vibrio phrahaemol yticus , Vibrio cholera ,Vibrio vulnificus ,Enterobacter sakazakii were carried out based on the National Food-borne Disease Surveillance Program and a monitoring mission issued by Fujian Provincial Health Department. [Resolts]A total of 329 samples in ten kinds of food that were detected, 37 strains of objective pathogens were detected with an overall positive rate of 11.25%. Salmonella had the highest positive rate of 18.70%. Of the ten types of food,the contamination rate of animal aquatic product was the highest with overall positive rate of 46.51%, and frozen pasta was the second with overall positive rate of 21.74 %. There were different levels of food contamination in raw pork, raw lamb, raw beef, cooked meat products, baby food, milk and dairy products (raw milk, sterilized milk), etc. [Conclusion]Through 5 years continuing active surveil- lance,the situation of contamination in daily consuming foods by food-borne pathogens has been revealed, high risk foods are found, nine types of food-borne pathogens distributing trends in different foods are also known, and provide scientific basis for strengthen supervision and management of food hygiene to prevent food-borne disease.
