峰峰矿区厂矿食堂2003-2007年餐具监测结果

摘    要:目的了解峰峰矿区厂矿食堂餐具消毒状况,防止因餐具不洁而引起食源性疾病的发生。方法采用专用的大肠菌群快速检验纸片,按照《食(饮)具消毒卫生标准》GB14934—1994要求进行检验与评价,同时对该矿区厂矿食堂2003—2007年餐具消毒资料进行统计分析。结果2003--2007年间餐具消毒总合格率为80.10%,大、中型食堂餐具消毒合格率明显高于小型食堂,差异有统计学意义(P〈0.01);采用不同消毒方法其餐具的合格率也有所不同,热蒸汽消毒的合格率明显高于煮沸和化学洗消剂2种消毒方式,差异有统计学意义(x^2=5.18,P〈0.05;x^2=4.31,P〈0.05)。结论该矿区厂矿食堂餐具消毒保洁状况不容乐观,应加强餐具消毒的监督监测,特别是加强小型食堂的监督管理。

Abstract:[ Objective] To understand the tableware disinfection condition in the canteens of Fengfeng Coalmine and prevent the attack of food-induced diseases. [ Methods] Special slip for rapid detection of coliform group was used; statistical analysis was made on the tableware disinfection data in the coalmine canteens according to the GB 14934-1994 "Sanitary Standard for Food & Drink Tableware Disinfection". [Results] The total eligible rate of the tableware disinfection was 80.10% ; that of the large and mediumsized canteens was significantly higher than that of the small canteens, the difference was significant ( P 〈0.01 ) ; the eligible rate using heat steam was significantly higher than that using boiling and chemical disinfectants, the difference was also significant ( P 〈 0.05). [ Conclusion] The disinfection condition in the coalmine canteens is not satisfactory; supervision should be strengthened on the tableware disinfection, especially on the small canteens.
