维生素C钠盐粉末稳定性研究

摘    要:研究中测得 Vc—Na 粉末的临界相对湿度为82%。水分对 Vc—Na 粉末稳定性影响比温度大。当容器内含水量为1~5%时,Vc-Na 的降解为0级反应。当容器内含水量为1%(25℃)时,t_(0.9)为3年。在光线照射下,容器内含水量为1%(20℃)时,t_(0.9)为10.5天。

Abstract:It was determined in this research that critical relative humidity of sodium ascorbate is 82%.The effect of water on stability is larger than temperature. When the range of water content in test container are between 1% and 5%, the degradation rate of sodium ascorbate is zero-order.When water content in test container at 1%,the t_(0.9) of sodium ascorbate is 3 years.Effect of light on stability of sodium ascorbate is very strong,when water content in test container at 1%,the t_(0.9) is 10.5 days(20℃).
