2004年曲阜市部分面粉增白剂残留量调查

目的]掌握曲阜市和外埠面粉及面制品中增白剂的使用情况，加强面粉的卫生监督管理。方法]2004年4～6月对曲阜市城乡面粉加工厂和部分批发零售单位的面及面制品进行调查。结果]抽查面粉及其制品226份，过氧化苯甲酰检出率为16．8％、超标率为15．5％，甲醛次硫酸氢钠检出（超标）率为4．9％。过氧化苯甲酰超标率粉丝、面粉、馒头的差异无统计学意义；甲醛次硫酸氢钠检出（超标）率，馒头最低（0．0％），粉丝最高（22．9％）。批发零售单位本地和外埠样品的差异无统计学意义。结论]曲阜市市场上销售的本地、外埠面粉及其制品相当一部分超量使用过氧化苯甲酰和违规使用甲醛次硫酸氢钠。

Investigation on Whitening Agent Residual Volume of Some Flour in Qufu in 2004

Objective]To understand the situation of whitening agents usage in flour and its products in Qufu in order to strengthen their health supervision and administration.Methods]some samples of flour and its products were choosen for detection during the period from april to june of 2004,these samples were from flour factories and enterprises of retail or wholesale in town and countryside of qufu.Results]226 samples were tested.The detection rate of benzoyl peroxide was 16.8% and supernormal rate was 15.5%.The detection rate of methanal sodium bisulfite was 4.9%.There was no signififcant difference between supernormal rates of benzoyl peroxide in vermicelli and that in steamed bun.The detection rate of methanal sodium bisulfite was the lowest in steamed bun (0.0%) and the highest in vermicelli (22.9%).There was no significcant difference in the usage situation of whitening agents between samples of retail or wholesale enterprises from native and those from ecdemic region.Conclusion]The usage amount of benzoyl peroxide went beyond the limits allowed and methanal sodium bisulfite was also used illogically, which was found in quite a lot of flour and its products sold in Qufu market from native and external districts.
