摘    要:目的 了解目前深圳市食品污染状况,为制定食品安全指数提供依据。方法 严格按照详细的采样实施方案,在该市7个食品污染物监测区域共14个监测点,采用整群抽样的方法抽取14类829件食品,进行重金属、有机氯、有机磷、黄曲霉毒素B1等化学污染物和沙门菌等病原微生物污染物指标的测定。结果 共获得6282个有效监测数据,其中11件食品中的铅,13件食品中的镉以及9件食品中的砷超出国家标准;六六六、DDT、有机磷农药残留量检出率分别为1.45%、1.72%、53.8%,9种食源性肠道致病菌平均检出率为2.7%,其余食品受污染的水平均大大低于国家标准和CAC标准。结论 深圳市果蔬类食品是农药污染的高危食品,肉及肉制品是肠道致病菌污染的主要食品,部分农副产品重金属超标,今后需重点加强监督管理。

Abstract:Objective] To learn the food contamination status in Shenzhen and provide basis for establishing food safety index. Methods] 829 samples of 14 types were randomly selected and monitored for pathogenic microorganism contamination indexes including heavy metal, organic chlorine, organic phosphorus, yellow aspergillus toxin B1 and so on. Results]6 282 effective data were obtained, among which the concentration of lead, cadmium and arsenic exceeded the national standard in 11, 13 and 9 samples.respectively; the detection rates of 666, DDT and organic phosphorus residues were 1.45%, 1.72% and53 . 8% respectively; the average detection rate of 9 kinds of foodinduced intestine pathogenic germs was 2.7 % ; the contamination levels of other food were much lower than the national standard and CAC standard. Conclusion] Fruits and vegetables in Shenzhen are high- risk foods with pesticide contamination; meat and meat products are major foods with intestinal pathogenic germs contamination; some agricuhtural products were found with super- scale heavy metal. Therefore, supervision should be strengthened.
