摘    要:目的:了解扬州市8类食品中Lm污染状况、流行特征及耐药状况,为制定HACCP提供依据,以有效控制Lm的生物性危害。方法:从市场及宾馆饭店采集957份熟食、生肉制品、水产品等8类食品检测Lm,检出菌株以生化及PCR方法鉴定并做药物敏感试验。结果:共检出加43株,检出率为4.49%。其中熟肉制品检出率为9.62%,生肉制品为3.83%,蔬菜、牛奶、鲜鸡蛋及冰淇淋中未检出。17种抗生素中有9种抗生素出现了不同程度的耐药。结论:本市8种食品中存在一定程度Lm污染,以熟食污染率最高。生肉制品为食品链中Lm的主要来源,熟食是实施HACCP控制Lm的关键环节。Lm耐药现象在一定程度上存在。加强食品卫生管理尤其是熟肉制品的管理,控制动物饲料亚治疗抗生素的使用并严格遵守休药期对防止耐药菌株、控制食源性疾病很有必要。

Abstract:Objective:To learn epidemic status and drug resistance of L.monocytogenes in 8 kinds of foods in order to make HACCP to reduce the hazards of Lm .Methods:957 samples of food such as cold food, raw meat etc were collected in markets,restaurants and hotels for L.monocytogenes isolation which were identified by PCR and biochemical tests.Drug resistance tests were conducted to the isolated L.monocytogenes .Results:43 strains were isolated and the positive rate was 4.49%.The positive rate in cold food and raw meat was 9.62%,3.83%,respectively.No strains were isolated from vegetables, milks, eggs and ice cream.Drug resistance occurred in 9 antibiotics among 17.Conclusion: L.monocytogenes pollution occurred in 8 kinds of foods.The cold food was critical as HACCP was made to control the hazards of Lm , the raw meat was the source of Lm .It is important to strengthen the food sanitation management especially the cold food.To control and reduce the use of antibiotics in animal feedstuffs and to stand by the withdrawal time strictly are necessary for reducing the drug resistance pathogens.
