摘    要:检测各类样品416份,细菌总数合格率为15.63%,大肠菌群合格率为39.18%,肠道致病菌检出率为6.60%,佐料中粪大肠杆菌检出率为63.33%,不合格样品细菌总数平均超过国家卫生标准431倍,大肠菌群平均超标230倍。

Abstract:416 different samples were detected in the study.The results showed that the qualified rate of aerobic bacterial count was 15.63%,the coliform bacteria was 39.18%,and the isolation rate of enteropathogen was 6.60%.The mean of aerobic bacterial count of unqualified samples was 432 times more than the national standards,that of coliform bacteria was 230 times more than the national standards.In large state-run restu rants,there were essential sanitary equipments,which were not made full use of,in middle and small restu rants,there were not enough sanitary equipments or there was none.
