摘    要:目的:为了解某校大学生维生素C、铁营养状况。方法:采用称重法与询问法相结合进行调查和测定。结果:大学生膳食结构不合理,维生素C摄入量偏低、占RDA5815%,铁摄入量较高.占RDA16708%,但大部分为非血红素铁。4h负荷尿试验维生素C不足率达5000%,血清铁不足率为1897%。维生素C正常组与不足组血清铁含量及铁不足率均有显著性差异(t=428,P<0.01,x2=7.73,P<0.01)。机体维生素C水平与血清铁含量呈显著性正相关(r=0.4387,P<0.01)。结论:该校大学生膳食中动物性食品及蔬菜水果类食品摄入量偏低,机体维生素C、铁营养状况不良,应注意增加动物性食品和蔬菜水果类食品的摄入量。

Abstract:Vitamin C and iron nutriture of college students was determined. The results showed that their dietary structure was not ratioal , vitamin C intake was 58. 15% of RDA, iron intake was 167. 08% of RDA, but major iron sources were plant foods, namely non - haemochrome iron . Insufficient rates of vitamin C in 4 hour load urine and serum iron were 50. 00% and 18. 97 %. There were significant differenes in serum iron content and insufficient rate between vitamin C normal and insufficient groups (t = 4. 28, P< 0. 01 and x2 = 7. 73, P< 0. 01). The contents of uring vitaxnin C and serum iron had significant positive correlation (r = 0. 438, P<0. 01).
