河南省181份油条卫生指标检测结果分析

目的:了解河南省油条卫生质量。方法:选取河南省部分市县饭店、早餐点、学校食堂炸制的油条,采用GB/T5009规定的方法测定了油条中铝、总砷、铅、酸价和过氧化值。结果:所检181份样品的综合合格率为8.84%。其中,铝检出率96.1%,含量均值623 mg/kg,超标率89.5%;总砷检出率76.8%,含量均值0.10 mg/kg,超标率9.39%;铅检出率26.5%,含量均值0.80 mg/kg,超标率2.21%;酸价检出率100%,含量均值0.95 mg/g,超标率4.42%;过氧化值检出率100%,含量均值0.12 g/100 g,超标率3.87%。结论:河南省油条合格率较低,不合格原因主要是铝超标。

Results analysis of hygienic items for 181 dough sticks in Henan province

Objective:To know the hygeine quality of dough sticks in Henan province.Methods:Aluminum,total arsenic,lead,acid value and peroxide value in samples from hotels,breakfast stands,school canteens in some cities and counties of Henan province were examined according to analytical methods of GB/T 5009.Results:The qualified rate was 8.84% in 181 samples.The detection rate was 96.1%,the average content was 623 mg/kg,and the over-limit rate was 89.5% for aluminum;The detection rate was 76.8%,the average content was 0.10 mg/kg,and the over-limit rate was 9.39% for total arsenic;The detection rate was 26.5%,the average content was 0.80 mg/kg,and the over-limit rate was 2.21% for lead;The detection rate was 100%,the average content was 0.95 mg/kg,and the over-limit rate was 4.42% for acid value;The detection rate was 100%,the average content was 0.12 g/100 g,and the over-limit rate was 3.87% for peroxide value.Conclusion:The main reason for the low qualified rates of dough sticks was due to excessive aluminum.
