北疆地区刺山柑多酚类物质消长规律及其抗氧化活性的研究

目的研究北疆地区刺山柑中多酚类物质消长规律并对其抗氧化活性进行比较。方法采用Folin-Ciocalteu法,测定北疆地区刺山柑多酚类物质含量,用DPPH法对其抗氧化活性进行比较。结果北疆地区刺山柑多酚类物质含量6月花蕾中达到25.72 mg/g,自由基清除率最高。结论刺山柑不同部位不同时期多酚含量存在显著性差异,抗氧化活性也存在不同,石河子地区刺山柑6月份花中多酚类物质含量最高,抗氧化活性最强。

Total Polyphenols and Its Antioxidant Activity of Capparis spinosa L.in North Part of Xinjiang

Objective To determine the variation of ployphenols in Capparis spinosa L.in north part of Xinjiang and to study its antioxidant activity.Methods The content of polyphenols Capparis spinosa L.was determined by Folin-Ciocaileu Method.Then the antioxidant activity of Capparis spinosa L were measured with DPPH(1,1-dipheny l-2-picrylhydrazyl) method.Results The content of polyphenols in June Capparis spinosa L.flower was 25.72 mg/g,and the flowers had the highest scavenging activity against free radical.Conclusion The content of polyphenols and its antioxidant activity are different in Capparis spinosa L in different times and organs capers in the north part of Xinjiang.Flowers in June has the highest polyphenols content and the strongest antioxidant activity.
