广州市2005-2007年超级市场散装直接入口食品卫生质量分析

摘    要:目的了解广州市超级市场散装直接入口食品的卫生质量,为加强食品卫生工作管理、保障消费者身体健康提供依据。方法对2005-2007年广州市内4间大中型连锁超级市场属下的生产经营单位制售的糕点类、油炸类、烧烤类、酱卤类、凉拌类、饮料类等6类散装直接入口食品的监测结果进行分析,检验方法和卫生评价依据国家相关的卫生标准进行。结果2005-2007年6类食品的总合格率分别为82.39%、85.07%和94.74%,差异有统计学意义(P0.01);超市本部制售的食品合格率均高于外租户制售的同类食品,其中凉拌类和糕点类与之差异有统计学意义(P0.05)。结论2005-2007年散装直接入口食品卫生质量在逐年提高,但仍不稳定,有关行政职能部门须加大监管力度;在超市本部现场制售该类食品较之外租户制售的同类食品为安全,提示推行在超市本部现场制作销售散装直接入口食品应是今后超市发展的方向。

Abstract:Objective To study the hygienic quality of the fast foods in bulk of supermarkets in Guangzhou and provide the basis for strengthening the administration of food hygiene and safeguarding consumers' health.Method The test results of fast foods which were produced between 2005 and 2007 by the four supermarkets and its subordinate manufactories in Guangzhou were analyzed according to government standards.The test articles include cakes,pastry,fried,grilled food,pickled、cold、dressed food and beverages.Results The total product percent of pass were respectively 82.39%、85.07% and 94.74% between 2005 to 2007,and the differences were significant(p0.01).Product percent of pass of foods made in supermarkets were higher than those made in its subordinate manufactories and the difference between cold and cakes was significant(p0.05).Conclusions Although the quality of fast foods in bulk was improved yearly from 2005 to 2007,the tendency was still unstable.So correlative administrative department should strengthen regulatory efforts.The foods made in supermarkets were safer than those in its subordinate manufactories which indicates that making fast food in the supermarket should be the development direction in the future.
