石斛多糖提取加工新技术的应用现状

摘    要:石斛是中国传统的养生品之一,应用历史悠久,其众多的食用药用价值引起了学者的广泛关注,民间常取新鲜石斛捣汁、泡茶饮用或直接加到食材中烹制后食用.石斛多糖具有调节免疫力、抗氧化、抗肿瘤及降低血糖等生物活性,还可用于抑制脂类氧化和稳定酸性饮料中的蛋白质.本文综述了近年来石斛多糖的提取加工新技术,旨在为石斛多糖的深入研究及其在医药和食品工业化的开发应用提供参考.

Abstract:For a long time, Dendrobium is one of the traditional products keeping in good health in China. Many of the medical and edible value of it has attracted widespread attention. People often drink juice from fresh Dendrobium Caulis or tea brewed in Dendrobi- um tea.Some of them, sometimes, add directly these Dendrobium species to their daily diehes. Previous researches have shown that the polysaccharides from Dendrobium species have various biological functions, such as immunoregulation, antioxidation, antitumor, hypo- glycemic effects,etc. They can also improve the food characteristics,such as the inhibitory effects on the oxidation of lipids, the effects on the stability of the milk protein under acidic conditions. This paper summarizes the new technology for extracting and processing polysac- charides from Dendrobium species in recent years, which aims to provide some references for the future research and development of polysaccharides in both food industry and medicine industry.
