许昌市区宾馆饭店商场现榨果蔬汁卫生质量分析

摘    要:目的了解许昌市区宾馆饭店商场销售的现榨果蔬汁的卫生质量。方法2008年5—10月对该市15家宾馆饭店商场的现榨果蔬汁样品共计60份,严格按照GB/T 4789.2~3-2003的规定的操作方法进行相关项目的检验。结果60份样品菌落总数合格率为23.3%(14/60),大肠菌群合格率为63.3%(38/60)。样品总合格率为23.3%(14/60)。结论许昌市现榨果蔬汁合格率不高,现榨果蔬汁的制作过程存在着比较严重的污染,建议卫生监督部门加大执法力度,宣传有关食品卫生法规和知识的培训,相关生产者加强对现榨果蔬汁制作工艺流程等相关环节的卫生管理。

Abstract: Objective] To understand the sanitary quality of fresh juice for sale in hotels, restaurants and marketplaces in urban district of Xuchang City. Methods ] 60 fresh juice samples were collected from 15 hotels, restaurants and marketplaces during May to October, 2008. According to the operation methods of GB/T4789. 2 -3 -2003, the related items were tested. Results]The qualified rate of the total colony count was 23.3% ( 14/60), that of coliform group was 63.3% (38/60). The total qualified rate was 23.3% ( 14/60). Conclusion]The qualified rate of fresh juice was not good in Xuchang City, there were serious pollution in the making process of fresh juice. It is suggested that related departments should enhance law enforcement and propagandize the laws and knowledge of food hygiene, and producers should strengthen the health management of related links in the making process of fresh juice, such as manufacturing flow.
