摘    要:综述了大分子乳化剂改善复乳稳定性的作用机制及其在复乳中的应用现状.复乳是复杂的液体分散体系,为热力学不稳定系统,易发生分层、絮凝和合并,通常加入单体乳化剂以提高其稳定性.近年来大分子乳化剂如生物聚合物、嵌段聚合物、高分子乳化剂因能较好地改善复乳稳定性,在复乳中得到广泛应用.
