蓖麻分离蛋白的安全性评价

摘    要:为开发利用蓖麻分离蛋白,本文按食品毒理学方法,对其进行了初步的安全性毒理学评价,包括急性毒性试验、蓄积毒性试验和Ames试验。结果表明,蓖麻分离蛋白的经口LD_(50)为21500mg/kg,为无毒物质。在40天的蓄积毒性试验中,538mg/kg、1075mg/kg、2150mg/kg及4300mg/kg四个试验组和一个对照组的动物均无异常表现,各试验组的体重增重和对照组相似,说明蓖麻分离蛋白粉对小鼠无蓄积毒性作用,对小鼠体重增重也无不良影响。蓖麻分离蛋白的微核阳性率为2.4‰,和阴性对照组的微核阳性率相同,而阳性对照组的微核阳性率为28‰。Ames试验显示菌麻分离蛋白粉对测试菌无诱变活性。故认为蓖麻分离蛋白粉没有经口致死毒性和致突变性。

Safety Estimation of Castor Protein Isolated

Abstract:To Know whether castor protein isolated is sa- fety or not, the acute toxicological test, accumla- ting toxicity test, micronucleus test and Ames test were conducted. The results show that the mice's LD50 is 21500mg/kg by oral means. During 40days' accumulating test, all mice acted as usual at oral dosages 538 mg/kg, 2150 mg/kg and 4300 mg/kg ev- ery day. This suggests that it has not accumulating toxicity to mice. The micronucleus rate of the test group and control group are 2.4%, and positive con- trol group is 28%. In Ames test, no mutagenesis were obtained with Salmonella Typhimurium TA97. 98, 100, amd 102. We think that castor protein iso- late has neither acute toxicity nor mutagenicity.
