山东莱阳农村居民膳食结构调查与评价

摘    要:对山东莱阳农村居民1984,1987,1991年三年的膳食情况进行了调查。结果表明:该地农民的膳食结构已由粮食为主型向营养齐全的副食型转化;热能的摄入量呈增加趋势,三大营养素的供热比例日趋合理;优质蛋白质摄入量占总蛋白质摄入量的比例上升,但总蛋白质的摄入量增加不明显;钙、锌、维生素A,维生素B_2的摄入量一直低于供给量标准,来自动物性食品的比例很低,且八年间变化不大。

Abstract:An investigation of the dietary pattern in Laiyang area, Shandong Province, in1984, 1987 and 1991 shows that the farmers' diets in that area have been changing fromgrains to non-staple food containing plentiful nutrients. The caloric intake tends to in-crease and the proportion of caloric supplied by protein, fat, carbohydrate is becomingincreasingly rational. The proportion of high-quality protein has inccreased, but that oftotal protein has not increased evidently. The intake of Ca, Zn, VitA and VitB_2 has al-ways been below the RDA. The proportion of animal meat, which has been very smallduring the past eight years, is not showing any significant change.
