成都市部分中小学校食品卫生管理工作调查

摘    要:目的:加强中、小学校食品卫生管理,为制定管理措施提供客观依据。方法:对成都市20个区(县)的239个中、小学校食堂的食品卫生状况进行调查,通过现场检查,随机抽问食品从业人员后填写统一的调查表。结果:中、小学校食堂无有效“食品卫生许可证”者占4.60%,从业人员无“健康证”上岗的食堂占10.46%,食堂操作间内功能分区混乱者占11.30%,“三防”设施不全者占25.52%,公用餐具不消费或消费不规范者占8.37%,食品库房管理混乱者占27.20%,采购大宗食品不索证者占33.05%,结论:通过调查找到了产生问题的主要原因是食品卫生安全意识不够,设备不完善,疏于管理,从事人员缺乏相应卫生知识。

Abstract:Objective To strengthen the management of food health in primary and middle schools and to provide objective reference bases for formulating management measures.Methods The food health states of dinning rooms of 239 primary and middle schools in 20 counties and boroughs of Chengdu city were investigated.Results The dinning rooms without valid food health certificate accounted for 4.60% of the total.The dinning rooms where the staff had not health certificate accounted for 10.46% of the total.The dinning rooms where the cooking areas were disordered accounted for 11.30% of the total.The dinning rooms without entire facilities to prevent the harm of rat,fly and dust accounted for 25.52% of the total.The dinning rooms without public dinner-set sterilization or normative sterilization accounted for 8.37%.The dinning rooms where the management of storeroom was disordered accounted for 27.20%.The dinning rooms without asking for product certificate when purchasing food in large numbers accounted for 33.05%.Conclusions The primary reasons for food poisoning happened in primary and middle schools in recent years are following:they lack of consciousness of food health and have not entire facilities,the management of food health is not normative,and the staff?*ss relevant health knowledge is absent.
