进口俄罗斯蜂蜜的真实性及食源性微生物检测分析

摘    要:目的了解进口俄罗斯蜂蜜的真实性及微生物污染情况。方法采集进口俄罗斯蜂蜜样品132批,依据我国标准要求,对反映真实性的理化指标及微生物指标进行检测分析,包括蔗糖、果糖和葡萄糖、碳-4植物糖、菌落总数、大肠菌群、霉菌计数、嗜渗酵母计数等。结果大肠菌群、霉菌计数未检出,其他指标均有样品检出不合格,不合格率分别为蔗糖1.52%(2/132)、葡萄糖和果糖2.27%(3/132)、碳-4植物糖5.88%(1/17)、菌落总数1.52%(2/132)、嗜渗酵母总数3.79%(5/132)。t检验分析,检出指标样本均值与限量值之间差异均有统计学意义(P<0.05)。结论大部分进口俄罗斯蜂蜜真实性指标和微生物指标符合我国标准要求,但存在个别样品真实性指标不合格以及微生物污染超标问题,建议相关部门加强风险监测和风险交流,打击食品走私,防止不合格蜂蜜流入我国市场。

Abstract:Objective To investigate the authenticity and contamination of food borne microorganisms about honey imported from Russia.Methods We collected 132 samples of honey imported from Russia,and tested the parameters related to sample authenticity and the microorganisms,including sucrose,fructose and glucose,C-4 plant sugars,colony count,enumeration of coliforms,fungal count,osmotic yeast count.Results Coliforms and fungal were not detected in all samples,the proportion of unqualified samples were 1.52%(2/132),2.27%(3/132),5.88%(1/17),1.52%(2/132)and 3.79%(5/132)for surose,fructose and glucose,C-4 plant sugars,colony count and osmotic yeast count,respectively.Based on the results of the one-sample t-test,there was statistical significance on the differences between the limit value and the sample mean of positive criteria(P<0.05).Conclusion For most honey samples imported from Russia,the parameters related to sample authenticity and microbiological indicators meet the standards of China,however,there are a small number of individual samples that are not qualified.It is recommended that relevant departments should strengthen risk monitoring and risk communication,fight food smuggling and prevent unqualified honey from flowing into the Chinese market.
